The only Gospel that tells us about this detail is John’s. In fact, in chapter 19, he tells us that Jesus said He was thirsty. In answer to this request, He was offered some vinegar, on a sponge. As in the whole narration of the Passion, John’s intention is to see and represent Christ as the one who is going to accomplish the Old Testament prophecies. While he mentions vinegar, he sends us back to the faithful man’s moaning of in Psalm 69: “They gave me also gall for my meat; and in my thirst they gave me vinegar to drink” (verse 21). These words were a prophecy of Christ’s passion.
